As you know, the cooking posts I’ve been sharing with you are from recipes I’ve found from the internet. But ladies and gentleman, I’ve decided to share with you something you can’t (maybe) find on the web. This a recipe my sister and I make all the time, our white chicken chili. (Insert choir singing praises here.)
This is a great meal for a cold winter night. It makes plenty of servings and the leftovers are sometimes even better.
Items you’ll need:
One whole onion
Salt and Pepper
One large jar of Mixed Beans
A jar of salsa
Optional: Shredded cheese
Optional but HIGHLY recommended: Fritos
First thing you do is dice your onion and chicken. I like bite size pieces of chicken with large pieces of onion, but feel free to chop to your delight.
Next, saute the onions and toss in the chicken bites.
Salt and pepper to whatever you think you will make you happy. (This is not a very regimented recipe. GB would be proud of my ability to be so flexible with this recipe.)
Drain the jar of mixed beans well then toss in with the chicken and onions.
Toss in a jar of salsa.
Stir and cook for about 20 minutes.
I like to top each serving with shredded cheddar cheese and a handful of Fritos. The Fritos add the needed crunch and cheese just makes everything better.
